This is also called Oriental Fried Noodle Salad. Once you add the dressing and noodles, it doesn't keep but you can prepare all the ingredients well ahead of time. To make complete meal just add chopped cooked chicken or pork.
- 1/2 chinese cabbage, shredded finely
- 6 shallots chopped
- 100grams pinenuts or lightly roasted silvered almonds
- 1 pkt Chang's Fried Noodles
- 1/4 cup white vinegar
- 1/4 cup caster sugar
- 1 tablespoon Soy Sauce
- 2 tablespoons sesame oil
- 1/2 cup olive oil.
- Combine all the dressing ingredients in a bottle and shake until the sugar dissolves
- toss the cabbage, chopped shallots and pinenuts or silvered almonds in a salad bowl.
- just before serving, add dressing and mix well
- add the noodles and toss thoroughly.
