Carrot Salad

A crunchy salad I like to serve with barbecues. You can use any sort of nuts and they can be raw or roasted. If salted, don't add the extra salt in this recipe.


  • 1-1/2 cups grated carrots
  • 1 cup sultanas
  • 1/2 cup finely chopped celery
  • 1/2 cup chopped nuts
  • 1/3 cup mayonnaise
  • 1 tsp sugar
  • 1/4 teaspoon salt


  1. combine the carrots, sultanas, celery and nuts in a serving bowl
  2. mix the mayonnaise, sugar and salt
  3. add the mayonnaise to the salad and mix well.
