Mock Chicken

Not sure why this is called "Mock Chicken" but it's a nice spread for savouries biscuits or you could serve it as a dip.


  • 1 tsp butter
  • 1 finely chopped onion
  • 1 large tomato, skinned and sliced
  • 1 beaten egg
  • 2 tab grated cheese
  • 2 tab soft breadcrumbs
  • 1/2 tsp dried mixed herbs
  • salt and pepper


  1. melt the butter in a medium saucepan
  2. add the onion and cook until soft
  3. add the other ingredients, seasoning to taste
  4. continue to cook for a few minutes
  5. bottle and refrigerate.
