Not sure why this is called "Mock Chicken" but it's a nice spread for savouries biscuits or you could serve it as a dip.
- 1 tsp butter
- 1 finely chopped onion
- 1 large tomato, skinned and sliced
- 1 beaten egg
- 2 tab grated cheese
- 2 tab soft breadcrumbs
- 1/2 tsp dried mixed herbs
- salt and pepper
- melt the butter in a medium saucepan
- add the onion and cook until soft
- add the other ingredients, seasoning to taste
- continue to cook for a few minutes
- bottle and refrigerate.
