Lemon Delicious

This dessert can be prepared ahead of time if you want to serve it cold. It is similar to the impossible pie in that the ingredients layer themselves in the dish while cooking.


  • 30g butter
  • 1/2 cup sugar
  • 2 eggs, separated
  • 1 tsp grated lemon rind
  • 1/2 cup lemon juice
  • 2 tab SR flour
  • 1 cup milk


  1. Cream butter, sugar and egg yolks until light and fluffy
  2. stir in lemon rind, lemon juice, flour and milk
  3. beat egg whites until you have stiff peaks
  4. gently stir the egg whites into the lemon mixture
  5. pour into a greased casserole dish
  6. stand dish in a baking dish which is half filled with water
  7. bake in a moderately slow oven for 45 minutes until the top of the dessert is golden brown
  8. serve hot or
  9. allow to cool, refrigerate and serve cold.
