Even though all the ingredients are combined, this dessert layers itself during the cooking process. The flour drops to the bottom and the coconut floats to the top with the egg mixture in the middle.

- 4 eggs
- 1/3 cup butter
- 1/2 cup plain flour
- 1 cup coconut
- 2 cups milk
- 1 cup sugar
- 1 tsp vanilla essence
- Combine all the ingredients in a food processor
- blend until combined
- pour into a greased casserole or large pie plate
- bake in a moderately slow oven for 1 hour until pie is firm and golden brown on top.
- serve warm with icecream
Passionfruit - substitute 1 cup of milk and the vanilla essence for juice and pulp of 4 passionfruit.
Citrus - substitute 1 cup of milk and the vanilla essence for rind and juice of a lemon and an orange.
