This recipe was originally given to me by my Mum with a date slice recipe. I use it to top other cakes and slices too as it's easy to make and great if you don't have icing sugar in the pantry.
- 1 cup brown sugar
- 2 tsp butter
- 2 tab milk
- 1 tsp vanilla essence
- Place all ingredients into a small saucepan and stir to combine.
- Heat to boiling point and boil for 3 minutes without stirring.
- Remove from heat.
- Beat vigorously with a spoon until the mixture begins to thicken
- Quickly pour onto the cake or slice and spread.
The topping will harden very quickly once it starts to thicken with beating so you must be ready to spread.
