Butter Icing

This is a rich frosting.


  • 125g butter, cubed, at room temperature
  • 225g (1 1/2 cups) pure icing sugar, sifted
  • 30ml (1/8 cup) milk


  1. Place the butter in a large mixing bowl. Use an electric beater to beat for 2 minutes or until very light and fluffy.
  2. Gradually add the icing sugar and beat until the mixture is very pale and fluffy. Gradually add the milk and beat until smooth and well combined.

Notes & tips

  • Orange: Add 1/2 tbs finely grated orange rind with the butter.
  • Coffee: Dissolve 1 tab instant coffee granules in the milk.
  • Chocolate: Reduce the icing sugar to 115g (3/4 cups). Omit the milk. Stir in 125g melted and cooled dark chocolate.
  • Dark chocolate: Reduce the icing sugar to 150g (1 cup). Omit the milk. Sift in 1 tab cocoa powder and then stir in 300g melted,and cooled dark chocolate.
