Butterscotch Cookies

This recipe is one of my Mum's and calls for powdered milk. If you don't have any, try using malt powder. Otherwise, use ordinary milk and add a little extra flour (couple of tablespoons extra should work).


  • 125g butter
  • 1 1/2 cups firmly packed brown sugar
  • 1 egg
  • 1 tsp vanilla essence (1/2 tsp vanilla extract)
  • 2 cups plain flour
  • 1/2 cup powdered milk
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp bicarbonate of soda
  • nuts or glace cherries for decoration


  1. melt butter in a saucepan
  2. add brown sugar and stir over low heat for 5 minutes
  3. allow sugar mixture to cool
  4. beat in egg and vanilla
  5. gradually fold in the dry ingredients until combined
  6. roll portions of mixture (about walnut shell size) and place on a lined baking tray.
  7. press a nut or half glace cherry on top of the ball
  8. bake in a moderate oven for about 15 minutes (until lightly browned)
  9. remove to a cooling rack
  10. store in an airtight container
