Tomato & Celery

Lovely flavour and light, so it's a good starter to a meal.  Serve with crusty bread.

Ingredients:

  • 1 kg ripe tomatoes
  • 1 onion
  • 1 head of celery
  • 2 litres of water
  • 1 tab stock powder
  • 2 tab tomato paste
  • 2 tsp sugar
  • 2 tsp cornflour
  • salt and pepper to taste

Method:

  1. roughly chop tomatoes, onion and celery and place in a large pot with the water
  2. bring to the boil and then reduce to a simmer for 1 hour
  3. strain out the vegetable pulp and discard
  4. return the stock to the pot and add the stock powder, tomato paste and sugar
  5. mix the cornflour in a little water and add to the soup.  Stir well
  6. return to a simmer and adjust seasoning if necessary
  7. serve.

Tips:

The soup can be frozen for a few months.
