Quick Sauce Pudding

Great when you want something warming and filling.  Serve with custard.

Ingredients:

for the pudding

  • 1 cup self raising flour
  • 1/ 2 cup sugar
  • pinch of salt
  • 1 cup sultanas
  • 1 egg
  • 1/ 4 cup milk

for the sauce

  • 1 tablespoon butter
  • 3 tablespoons golden syrup
  • 2 cups boiling water

Method:

  1. Grease a casserole dish and set oven to a moderate heat
  2. mix all the pudding ingredients together and pour into the casserole dish
  3. mix the sauce ingredients together and carefully pour over the pudding batter
  4. bake in a moderate oven for 30 to 40 minutes

Tips:

This is a basic recipe and you could vary it by replacing the sultanas with other dried fruit and/or nuts.  Citrus zest would be nice or try adding mixed spice.
