Tea Cake

This is an unpretentious cake, quick to make and small enough to enjoy for morning or afternoon tea with friends.  It is nicest eaten within a couple of hours of baking.

Ingredients:

  • 1/3 cup sugar
  • 1 tab butter
  • 1 egg
  • 1/3 cup milk
  • 1/2 tsp vanilla essence
  • 1 cup SR flour

Extra:

  • butter for spreading
  • sprinkling of sugar
  • sprinkling of cinnamon powder

Method:

  1. Cream butter and sugar
  2. add egg and continue beating until combined
  3. stir in milk and vanilla
  4. fold in the flour
  5. pour into a small cake pan which has been greased and floured
  6. bake in a moderate oven for about 1/2 hour - until cooked when tested with a skewer
  7. remove from the tin to a cooling rack
  8. while still hot, spread butter over the top and sprinkle with sugar and cinnamon.
