Cakes

Special treats to feed a crowd.  These recipes are generally easy to make, economical and are all favourites.

Cakes need to be made with eggs and butter at room temperature so that the cake mixture doesn't curdle. 

It's also important to cream the sugar and butter thoroughly so that the sugar is dissolved prior to baking.  Some recipes use a sugar syrup (boiling) method to avoid the need for creaming.
