Passionfruit icing

This recipe should be enough for the top of a cake cooked in a loaf tin.  You will need to double the quantity for a larger cake.


  • 1 cup icing sugar
  • 1 tab butter
  • 1 tab passionfruit pulp


  1. Sift icing sugar into a large bowl suitable for the microwave.
  2. Add butter and passionfruit pulp.
  3. Stir to form a stiff paste.
  4. Microwave 20 seconds to soften the mixture. 
  5. Stir well. 
  6. Using a knife, spread icing over cooled cake.
  7. Allow to set.
  8. Serve.
