Fudge Icing

This recipe was originally given to me by my Mum with a date slice recipe.  I use it to top other cakes and slices too as it's easy to make and great if you don't have icing sugar in the pantry.

Ingredients:

  • 1 cup brown sugar
  • 2 tsp butter
  • 2 tab milk
  • 1 tsp vanilla essence

Method:

  1. Place all ingredients into a small saucepan and stir to combine.
  2. Heat to boiling point and boil for 3 minutes without stirring.
  3. Remove from heat.
  4. Beat vigorously with a spoon until the mixture begins to thicken
  5. Quickly pour onto the cake or slice and spread.

Tips:

The topping will harden very quickly once it starts to thicken with beating so you must be ready to spread.
